What You Will Love About This Soup
- Incredible flavor. The leftover ham bone adds a ton of flavor. Even more than ham shanks or even adding extra ham to the soup. Even better, you donโt need a lot of meat on the bone to get the flavor. And a smoked ham bone is the best choice!
- Hearty and filling. Green split peas, vegetables, and ham will fill you up. And keep you warm. It is one of our most popular recipes in cold weather.
- Quick meal. The pressure cooker takes less time to make a flavorful soup. Compare that to the slow cooker that takes a long time to make just as good a pot of soup.
- Leftovers taste even better the next day. Just like all the best soups, leftovers are fantastic. What makes homemade split pea soup so much better after a night in the refrigerator?
Maybe itโs the co-mingling of flavors. Perhaps the water soaks up the starch, plumping the peas and veggies with flavor. Whatever the reason, you will love the leftovers.
Maybe even more than the original dinner.
Hambone Split Pea Soup Ingredients
- Split peas. Split peas are the main ingredient, the star of the show. Split peas are peas, which have been removed from their pod. Then they are dried, peeled, and split.
Use a 1-pound bag of split peas for this recipe. I use green split peas, but you can use yellow split peas too.
- Hambone. When a ham bone simmers in broth, it releases the deep savory notes of ham into the soup.ย As the bone cooks in liquid, all the little bits of ham attached to the bone soften. They begin to come off into the soup.ย No wasting a speck of ham.
As every bit of flavor is teased out of the ham bone, the soup takes on a rich meaty flavor.ย This flavor combines with the split peas, potatoes, and carrots to create an incredible, luxurious taste.
Adding meat to the soup doesnโt give the same flavor intensity as simmering the ham bone in the soup.ย Not by a long shot.
- Potatoes. Both Yukon Gold and Russet work well in this soup.
- Vegetables. Carrots, celery, and onions are the main vegetables in split pea soup.ย These three vegetables make the flavor base in many soups. The flavor combination balances the taste of split peas.
- Vegetable or chicken stock. Broth or stock gives the soup more flavor than cooking the soup with water alone.ย ย
I recommend using Better than Bouillon concentrated vegetable base.ย The bouillon contains seasoned, concentrated vegetables.
As a bonus, Better than Bouillon also has less salt than other bouillons or broths.ย Add one teaspoon vegetable base for every cup of water. Whisk together until combined.
Alternately, you can use your favorite pre-made vegetable or chicken broth.
- Herbs. Thyme is the best herb to flavor split pea soup.ย Followed by oregano. But donโt forget to add bay leaves, parsley, salt, and pepper.
Dried herbs are a better choice to use in a soup since the flavor of fresh herbs diminishes as they cook.ย
Dried herbs also save time since you donโt have to mince anything. Just make sure that when you open your herb container and take a sniff, you can smell the aroma of the herb. Otherwise, the herbs are too stale to use.
Add salt and pepper at the end of cooking time to adjust the taste.
Salt is a little tricky in split pea soup with ham.ย The salt content of broths varies widely. In addition, ham has a salty flavor.ย I recommend adding 1 teaspoon of salt to the soup as it cooks.
When the soup is finished cooking, taste it, and add more salt if necessary. But you may not need extra salt.
Substitutions
- If you don't have a hambone, you can add ham, sausage, or bacon. Bacon is better as a garnish.

For an alternative flavor, saute onions, then add garlic. Then add these different spices: 1 T curry and 1 tsp coriander, with 1/4 to 1/2 tsp red pepper, 1/2-1 tsp pepper. Don't add salt, the ham and bone give you the salt! This is delicious alternative spicy split pea soup. Our family loves it!
